Ingredients
1 Tbsp sliced almonds
1 cup sliced strawberries (fresh or frozen)
1 cup blueberries (fresh or frozen)
1 Tbsp + 1 ½ tsp of zero-calorie Truvia Original Calorie-Free Sweetener Spoonable Jar***, separated
1 cup plain nonfat yogurt
⅛ tsp almond extract
Directions
- 1.
Assemble all ingredients.
- 2.
Place almonds in a small sauté pan and toast on medium heat for 3-5 minutes, stirring often, until golden brown. Cool almonds.
- 3.
Combine berries and 1 ½ tsp Truvia Original Sweetener Spoonable, or 2 packets of Truvia Original Sweetener in a bowl and mix well.
- 4.
Place yogurt, 1 Tbsp of Truvia Original Sweetener Spoonable or 3 packets of Truvia Original Sweetener and almond extract in medium bowl and mix until combined and yogurt.
- 5.
Assemble 2 parfait or water glasses. Place 3 Tbsp fruit into the bottom of each glass.
- 6.
Top fruit layer with 3 Tbsp of yogurt mixture.
- 7.
Repeat the layers and finish with a dollop of yogurt mixture on the top. Chill.
- 8.
Garnish with toasted nuts just before serving.
- 9.
Store leftovers in the refrigerator.
*This parfait has 120 calories and 16 grams of sugar per serving as compared to 330 calories and 59 grams of sugar per serving in a full-sugar version.
