Tuna Macaroni Salad Recipe made with Truvia

Ingredients

  • 4 cups rotini whole grain-cooked (2 cups dry)

  • ⅓ cup diced, washed celery

  • ¼ cup diced, washed onion

  • 1 Tbsp diced, washed fresh parsley

  • 5 oz. light tuna in water

  • 6 washed and sliced cherry tomatoes

  • ½ cup aioli flavored mayonnaise with Truvia Cane Sugar Blend

  • 3 Tbsp low-fat sour cream

  • ½ tsp salt

  • ¼ tsp pepper

Directions

  • 1.

    Cook rotini following directions on package.

  • 2.

    In a large bowl, combine cooked rotini, celery, onion, parsley, tuna and tomatoes. Mix well.

  • 3.

    In a small bowl, whisk together aioli-flavored mayonnaise, mustard, Truvia Cane Sugar Blend aioli, sour cream, salt and pepper.

  • 4.

    Pour the dressing over the salad and stir until mixed well.

  • 5.

    Cover and chill 1-2 hours before serving.

  • 6.

    Store any remaining salad covered in the refrigerator.

Rated 4 out of 5 by from Tasty and filling! I made this recipe and it was very flavorful. I did substitute fat free sour cream for low fat which I assume you could do also so saved a few calories there. The garlic aioli add lots of different flavor and if you don't like garlic that could be an issue - luckily we all love garlic.

Rated 3 out of 5 by from A little dry This casserole although had good flavor did lack some moisture in my opinion. I love that it had Truvia in it as a sweetener which added a little something but maybe a tablespoon or 2 more of the mayo would be good!
