Sweet Roasted Beet and Goat Cheese Salad Recipe

Ingredients
Beets
5 medium beets, cleaned, peeled and cut into chunks (red and yellow)
½ Tbsp oil
1 tsp rosemary
½ tsp salt
1 tsp ground black pepper
2 tsp Truvia Cane Sugar Blend
Dressing
1 Tbsp Dijon mustard
1 Tbsp red wine vinegar
½ Tbsp oil
1 ½ tsp Truvia Cane Sugar Blend
Salad
3 cups mixed greens washed and toweled dry
3 oz. goat cheese
Directions

Preheat oven to 400 ᵒ F.

In a bag, toss the beets with oil, rosemary, salt, pepper and Truvia Cane Sugar Blend to coat the beets.
- 3.
Spread the beets in a single layer on a baking sheet.
- 4.
Bake beets 45 minutes or until all are tender, stirring after 20 minutes.
- 5.
For dressing, whisk the mustard, vinegar, oil and Truvia Cane Sugar Blend together until dissolved.
- 6.
In a large bowl, pour dressing over the greens and toss to coat.
- 7.
Add the beets then toss.
- 8.
Top with cheese.
- 9.
Refrigerate leftovers.
