Sweet Potato Casserole Recipe

Ingredients
Filling
6 cups cubed sweet potatoes
½ cup Truvia Cane Sugar Blend
½ tsp salt
1 tsp vanilla
2 eggs**
¼ cup butter
Topping
½ cup Truvia Brown Sugar Blend
⅓ cup flour
½ cup chopped pecans
⅛ cup melted butter
Directions
- 1.
Preheat oven to 350° F and spray a 9” x 13” baking dish with cooking spray.
- 2.
Bring 2 quarts of water to a boil in a large pot over medium heat.
- 3.
Once the water is boiling, add sweet potatoes cubes and cover.
- 4.
Allow the potatoes to boil until tender, about 30 minutes.
- 5.
Add butter, Truvia Cane Sugar Blend, salt, vanilla and mix well.
- 6.
Whisk eggs in a small bowl, then gradually add to mashed sweet potatoes.
- 7.
Pour mixture into prepared dish.
- 8.
For the topping, combine all the ingredients in a mixing bowl.
- 9.
Sprinkle the topping evenly over the top on the sweet potato mixture to make a nice crust.
- 10.
Bake for 30 minutes.

Allow to set at least 10 minutes before serving.
- 12.
Cover and refrigerate any leftovers
