Strawberry White Chocolate Blondies

Ingredients
Bars
1 1⁄2 sticks (3⁄4 cup) salted butter
2 large eggs**
2 tsp vanilla extract
2 cups all-purpose flour
1⁄2 tsp baking powder
1⁄2 tsp salt
1⁄2 cup Truvia Strawberry Freezer Jam or other reduced sugar jam
1⁄2 cup white chocolate chips
4 sliced fresh strawberries (wash before using)
Icing
1 tsp pure meringue powder
3-4 Tbsp warm water
1 tsp extract (optional)
2-3 drops of food color (optional)
Directions
- 1.
Preheat oven to 350° F. Line an 8x8 baking dish with parchment paper.
- 2.
To a medium pan add butter, heat on medium heat, allowing the butter to brown, it will smell toasted and have dark specs on the bottom when ready.
- 3.
Remove the butter from the heat and pour into a large heat safe bowl. Let cool 5 minutes.
- 4.
Whisk in the Truvia Sweet Complete Brown Sweetener, eggs, and vanilla extract into browned butter.
- 5.
Next, add the flour, baking powder, and salt, mixing until just combined.
- 6.
Add jam and white chocolate chips to the top of the dough.
- 7.
Fold jam into the dough creating swirls, don’t overmix. Dough will be thick.
- 8.
Press the dough out into the prepared dish.
- 9.
Bake for 25-35 minutes, edges will brown. (oven times may vary)
- 10.
While bars are baking, mix all icing ingredients in a small bowl, set aside.
- 11.
Remove bars from oven, let cool on a wire rack, in pan, don’t be surprised if the blondies have not risen much.
- 12.
Evenly sprinkle the fresh strawberries over the dough.
- 13.
Crudely spread the glaze all over the bars.
- 14.
Cut into 24 pieces and enjoy.
- 15.
Store in a sealable container.
