Strawberry Freezer Jam Recipe made with Truvia

  • 1.

    Wash and rinse plastic containers with tight-fitting lids.

  • 2.

    Wash and hull strawberries. Crush 1 cup of berries at a time using a potato masher, leaving some bits of fruit. (Do not purée)

  • 3.

    Measure 2 cups of crushed fruit and place in large bowl.

  • 4.

    Blend together Truvía® Sweet Complete® Granulated Sweetener and pectin until thoroughly mixed in a large saucepan.

  • 5.

    Stir in water and bring Truvia® Sweet Complete® Granulated Sweetener, pectin and water mixture to a boil on medium-high heat, stirring constantly. Boil and stir for 1 minute. Remove from heat.

  • 6.

    Add fruit into hot pectin mixture and stir for 1 minute until thoroughly mixed.

  • 7.

    Pour jam into prepared containers, leaving 12 inch of space at the top to allow for expansion during freezing, and cover.

  • 8.

    Let stand at room temperature for 24 hours until set.

  • 9.

    Store jam in the freezer for up to 1 year. Thaw each jar in the refrigerator before using. It may be stored in the refrigerator for up to 3 weeks.

Rated 4 out of 5 by from Very good recipe To use this recipe, important to be sure to se the 1:1 ratio. Also to make it just a bit better, slice the strawberries rather than crushing them. I "doubled" the ingredients except I used 5 cups of strawberries not 4.... Also once measured, pour the juice in the strawberries into your 1 cup measure. Top that off with water to make the cup or 1/2 cup if not doubling. and be sure to bring the mixture to a boil. Don't start timing until it comes to a FULL boil that can't be "stirred" down.

Rated 2 out of 5 by from Too sweet This jam is sickly sweet. I was hoping for a healthier alternative to store bought jam and made a double batch because I didn't want half of a packet of pectin left over. I will probably end up trashing most of this jam and trying again with a different recipe.

What makes it even better is that, because it is not cooked, you can really taste clean, fresh strawberry flavor. Thank you for such a great recipe!
