Shortbread Cookies made with Truvia

Ingredients

Directions

  • 1.

    Assemble all ingredients; preheat oven to 350° F and line a baking sheet with parchment paper.

  • 2.

    Place butter, Truvia Sweet Complete® Granulated All-Purpose Sweetener, egg and vanilla extract in a large mixing bowl with paddle attachment.

  • 3.

    Cream together ingredients for 1 12 minutes; set aside.

  • 4.

    Blend flour, cornstarch and salt together in a medium bowl.

  • 5.

    Fold dry ingredient mixture into the creamed mixture.

  • 6.

    Roll tablespoons of dough into 1-inch balls and place on lined cookie sheet approximately 2 inches apart.

  • 7.

    Bake in oven for 10-12 minutes or until edges of cookies are light golden brown.

  • 8.

    Place cookie sheet on cooling rack for 20 minutes before removing cookies.

  • 9.

    Store leftovers in a sealed container.

*Two cookies have 120 calories and 0 grams of sugar per serving, compared to the full-sugar version that has 140 calories and 7 grams of sugar per serving.

Rated 5 out of 5 by from Fantastic Cookie ! These cookies came out great. If you cook them a little lower temp they will be softer. It's great to have a couple of cookies and be satisfied. Try it with the Truvia Hot chocolate drink. Low calories = great taste!
