Directions
1.
Preheat oven to 350 degrees F.

In a large mixing bowl, mix pumpkin, apple sauce, sugar and vanilla until well combined.
3.
In a separate bowl, combine baking soda, baking powder, salt, pumpkin pie spice and flour. Mix well.
4.
Gradually add dry ingredients to the large mixing bowl of wet ingredients and mix until well combined.
5.
Fold in dark chocolate chips.
6.
Chill dough for 10 minutes.
7.
Scoop out a tablespoon of dough, flatten with palm of hand.
8.
Bake for 12-15 minutes or until cookies are just beginning to brown around the edges.
9.
Remove from oven, leave on sheet pan for 2 minutes, then transfer to a wire cooling rack and cool completely.
10.
Store cookies in a sealed container.

Yummy snackI made these with a couple substitutions -- I used 1.5 cups of chickpea flour instead of the regular flour and I used more pumpkin instead of the applesauce. I added a bit more Truvia to make up for the lower sweetness in the pumpkin. I used keto chocolate chips. They turned out very yummy with just the right amount of spice. My boyfriend is not usually a fan of healthy food, but he wouldn't stop eating these. If you have kids, this could be a good recipe for them because it is easy to stir.

Great CookiesThese cookies are easy to make and delicious. As good as similar cookies I’ve make with sugar, eggs, and oil/butter. These will be my go to chocolate chip cookies from now on.
