Pumpkin Bars Recipe

Ingredients
Bars
2 cups all-purpose flour
2 tsp baking powder
2 tsp ground cinnamon
1 tsp salt
1 tsp baking soda
4 whole eggs**
½ cup + ⅓ cup Truvia Cane Sugar Blend
1 cup vegetable oil
1 can (15 oz) pumpkin (not pie filling)
Frosting
16 oz. Neufchâtel or reduced-fat cream cheese, softened
¼ cup plus 2 tsp Truvia Cane Sugar Blend
1 tsp vanilla extract
1 tsp milk (optional)
Directions

Wisk together flour, baking powder, cinnamon, salt, and baking soda in a medium bowl and set aside.

In a large bowl, combine eggs, Truvia Cane Sugar Blend, oil, and pumpkin and mix until light and fluffy.
- 3.
Add dry ingredients gradually into wet ingredients while mixing.
- 4.
Spread batter into a greased 15” x 10” x 1” baking pan and bake at 350°F for 25 to 30 minutes, or until pick inserted in center comes out clean.
- 5.
Cool on wire rack.
- 6.
Place Neufchâtel or cream cheese and Truvia Cane Sugar Blend into medium mixing bowl and mix on low speed for 1 minute to combine.
- 7.
Add the vanilla. Mix on low speed 1 minute until creamy and blended.
- 8.
Add milk, if necessary, for thinner spreading consistency.
- 9.
Spread frosting on cooled bars. Cut into 20 bars.
- 10.
Store bars a sealed container in the refrigerator.
*These pumpkin bars have 240 calories and 7 grams of sugar per serving as compared to the full-sugar version that has 320 calories and 28 grams of sugar per serving.
