Pecan Pie Muffins Recipe

Ingredients
FOR MUFFINS
2 c. all-purpose flour
1⁄2 c. Truvia Sweet Complete Granulated All-Purpose Sweetener
1 1⁄2 tsp. baking powder
1⁄2 tsp. Kosher salt
1 c. whole milk
4 tbsp. butter, melted and cooled
2 large eggs*
2 tsp. pure vanilla extract
1 c. toasted pecans, chopped
FOR TOPPING
1⁄2 c. all-purpose flour
1⁄4 c. packed Truvia Sweet Complete Brown with a hint of Molasses Sweetener
3 tbsp. Truvia Sweet Complete Granulated All-Purpose Sweetener
4 tbsp. butter, melted
15 pecan halves
Directions
- 1.
Preheat oven to 350°F. Line 2 standard muffin tins with paper liners. In a medium bowl, whisk together flour, sweetener, baking powder, and salt.

In a large bowl, combine milk, melted butter, eggs, and vanilla. Add dry ingredients to wet mixture and stir until just combined. Fold in chopped pecans. Fill liners about ¾ full with batter.
- 3.
In a medium bowl, combine flour, sugars, and melted butter. Sprinkle over muffins and top each with a pecan half.
- 4.
Bake until golden and a toothpick inserted in the middle comes out clean, 18 to 20 minutes. Let cool before serving.
