Melting Sweet Potatoes

Ingredients
1 1⁄2 lb. sweet potatoes, scrubbed and sliced 1⁄4” thick
1 tbsp. extra virgin olive oil
Kosher salt
Freshly ground black pepper
1⁄4 c. packed Truvia Sweet Complete Brown Sweetener
1⁄2 c. pecans, roughly chopped
Directions

Preheat oven to 450º. On a foil-lined baking sheet, toss sweet potato slices with olive oil, and season with salt and pepper. Arrange in a single layer.

Roast, flipping halfway, until golden and just barely fork tender, about 20 minutes.

Top each sweet potato slice with a sprinkling of sweetener and chopped pecans, dividing evenly. Return to the oven and roast until potatoes are glazed and pecans are toasted, 5 to 7 minutes. Serve immediately.
