Ingredients

  • 2 lbs sweet potatoes, peeled and cut into cubes

  • 1 lb mashed sweet plantains or bananas

  • 1 stick (¼ lb) of unsalted butter

  • 1 grapefruit, zested and juiced

  • ½ to 1 cup low-sodium chicken stock

  • 1 cup vanilla almond milk***

  • ¼ cup of zero-calorie Truvia Original Calorie-Free Sweetener Spoonable Jar****

  • ½ tsp grated nutmeg

  • ½ tsp of cinnamon

  • Salt and freshly ground pepper to taste

***or 1 cup skim milk plus ½ tsp vanilla extract

Directions

  • 1.

    Boil potatoes until tender, drain, and keep to the side.

  • 2.

    Return the pot to the burner over medium heat. Add butter and plantains to the pot and cook for about 5 minutes.

  • 3.

    Add the juice of 1 grapefruit to the pot. Save the zest.

  • 4.

    Add sweet potatoes, ½ cup chicken stock, almond milk and Truvia Original Sweetener to the pot. Mash together until well combined. Add remaining ½ cup chicken stock in small increments to desired consistency.

  • 5.

    Season with nutmeg, cinnamon, salt, pepper and grapefruit zest to your taste.

  • 6.

    Store in a sealed container in the refrigerator.

Rated 5 out of 5 by from I made this with a twist When I was doing my clean eating I made mashed sweet potatoes but I didn't use the almond milk or butter. I also added crushed pineapples and walnuts. Either way it was very tasty. Truvia helps make it a little sweeter.

Rated 5 out of 5 by from Man o' Man, Fantastic I am a lover of sweet potatoes even before Truvia existed, however, my love of sweet potatoes has increased monumentally with Truvia and this Truvia recipe. Surely, in years to come, all those high calorie traditional enhancements to sweet potatoes, particular at holiday time--such as brown sugar and marshmallows--will be eagerly and appreciatively replaced with Truvia.
