Lemon Bars Recipe

Ingredients
Crust
½ cup almond flour
½ cup coconut flour
½ tsp salt
5 Tbsp unsalted butter
1 tsp lemon finely grated lemon peel
1 large egg- separated**
Filling
3 large eggs**
1 Tbsp cornstarch
1 1⁄2 tsp finely grated lemon peel
1⁄2 cup fresh lemon juice
Directions
- 1.
Heat oven to 350° F.
Crust
- 2.
Combine all ingredient, except egg white, in a medium bowl with mixer. Mix low 1 minute then mix medium speed 1 minute. Should have small lumps in mixture.

Press into even layer in bottom and up the sides of 8-inch square baking pan.
- 4.
Spread egg white over pressed crust rotating pan to get edges.
- 5.
Bake 25-30 minutes. Cool completely on wire rack.
Filling
- 6.
Whisk eggs until blended.
- 7.
Whisk in Truvia Sweet Complete® Confectioners Sweetener, cornstarch and lemon peel until blended.

Whisk in lemon juice.
- 9.
Pour carefully over cool crust make sure not to go over side crust.
- 10.
Bake at 350°F for 25 minutes or until set in center.

Cool completely on wire rack.
- 12.
Refrigerate leftovers.
