Irish Soda Bread Recipe

Ingredients
2 ¾ cups all-purpose flour
1 Tbsp. caraway seeds
1⁄3 cup Truvía® Cane Sugar Blend
1 ½ tsp baking powder
½ tsp baking soda
1 tsp cinnamon
½ tsp salt
½ cup raisins
1 ¼ cups buttermilk
2 eggs**
½ tsp vanilla extract
Directions
- 1.
Preheat an oven to 350°F.
- 2.
Combine flour, Truvía® Cane Sugar Blend, caraway seeds, baking powder, baking soda, cinnamon and salt in a mixing bowl.
- 3.
Mix on low speed 1 minute.
- 4.
Add in raisins, mix 30 seconds on low.
- 5.
Combine all remaining ingredients and add to dry ingredients.
- 6.
Mix on low for 2 minutes.
- 7.
Grease an 8 in cake pan.
- 8.
Transfer dough to pan.
- 9.
Bake 45 to 50 minutes.
- 10.
20 minutes into the bake, with a greased knife cut a deep x into the middle to the dough, this will help to prevent dough from ripping on sides during bake.

Cool for 5 minutes.
- 12.
Carefully remove bread from pan, using a knife to release the edges.
- 13.
Let cool completely and serve.
- 14.
Store leftovers in a sealed container.
