Ingredients
3 tsp Truvia Calorie-Free Brown Spoonable Sweetener from the Stevia Leaf
1 cup water
1 cup crushed pineapple
6 oz tomato paste
2 Tbsp apple cider vinegar
1 Tbsp garlic powder
1 tsp salt
2 Tbsp hickory smoker powder
½ tsp cayenne pepper
1 tsp habanero sauce
1 Tbsp Worcestershire sauce
1 1⁄2 lbs. chicken (3 skinless chicken breasts)
Directions
- 1.
Place everything except chicken into pressure cooker or crockpot.
- 2.
Wisk together to make sauce.
- 3.
Add chicken, coating all sides with sauce.
- 4.
Cook for 30 minutes in a pressure cooker or 2-2 ½ hour in a crock pot or until chicken shreds easily with a fork.
- 5.
Check that the internal temperature is 165°F.
- 6.
After cooking, shred chicken with two forks.
- 7.
Continue to heat for 30 more minutes on low or warm setting. This will let the sauce soak into the meat.
- 8.
Serve on slider buns, refrigerate leftover. (nutrition does not include the slider bun)
