Mocha Cupcake Recipe

Ingredients
1 cup all-purpose flour
1⁄2 cup unsweetened cocoa powder
2 tsp baking soda
1 tsp salt
1⁄2 cup butter, softened
1 egg**
1 tsp vanilla extract
1 cup cold, strong, brewed coffee (the stronger, the more flavorful)
Directions

Preheat oven to 350° F.
- 2.
Sift the flour, cocoa powder, baking soda and salt into a large-sized bowl. Whisk to combine. Set aside.
- 3.
In a medium bowl, mix the butter and Truvia Sweet Complete™ All-Purpose Sweetener until light and fluffy, about 2 minutes on medium.
- 4.
Add egg and vanilla and beat 1 minute on low.
- 5.
While beating, add 1⁄4 of flour mixture then 1⁄4 of coffee. Alternating until all is added. Beat until just incorporated. Batter will be lumpy.
- 6.
Divide batter into a lined 12 count muffin pan and bake until a pick inserted in the center of a cupcake comes out clean, 18-20 minutes.
