Ingredients

  • 1 cup all-purpose flour

  • 12 cup unsweetened cocoa powder

  • 2 tsp baking soda

  • 1 tsp salt

  • 1 12 cup Truvia Sweet Complete™ All-Purpose Sweetener

  • 12 cup butter, softened

  • 1 egg**

  • 1 tsp vanilla extract

  • 1 cup cold, strong, brewed coffee (the stronger, the more flavorful)

Directions

  • 1.

    Preheat oven to 350° F.

  • 2.

    Sift the flour, cocoa powder, baking soda and salt into a large-sized bowl. Whisk to combine. Set aside.

  • 3.

    In a medium bowl, mix the butter and Truvia Sweet Complete™ All-Purpose Sweetener until light and fluffy, about 2 minutes on medium.

  • 4.

    Add egg and vanilla and beat 1 minute on low.

  • 5.

    While beating, add 14 of flour mixture then 14 of coffee. Alternating until all is added. Beat until just incorporated. Batter will be lumpy.

  • 6.

    Divide batter into a lined 12 count muffin pan and bake until a pick inserted in the center of a cupcake comes out clean, 18-20 minutes.
