Coconut-Key Lime Popsicles Recipe

Coconut and key limes never tasted so good. This 5-ingredient delicious layered frozen treat is easy to make and using Truvia Original Sweetener, has 10% fewer calories* and 60% less sugar than the regular full-sugar version. Makes 8 ice pops.

  • 1.

    Pulse graham crackers in food processor until crackers are fine crumbs; (you will get about 23 cup crumbs) set aside.

  • 2.

    Juice limes. Place lime juice, coconut cream, coconut yogurt and Truvía® Original Sweetener into blender pitcher. Cover and blend until smooth, about 30 seconds.

  • 3.

    Fill each ice pop mold**** one-third full with coconut-lime mixture. Freeze for about 1 hour. Sprinkle about one-half Tbsp graham cracker crumbs on top. Freeze for 30 minutes.

  • 4.

    Add remaining coconut-lime mixture and sprinkle remaining graham cracker crumbs over top. Place handle into each ice pop. Freeze for at least 4 hours or overnight

  • 5.

    To unmold, place each ice pop in cup of warm water for a few seconds or until pops release.

****IF YOU DON’T HAVE AN ICE POP MOLD, YOU CAN STILL MAKE THESE FUN TREATS. JUST USE PAPER CUPS AND INSERT A FLAT WOOD STICK

Rated 5 out of 5 by from Great Snack I made these for my daughter and my husband last week and they absolutely LOVED them! They are easy to make and good to have handy. They couldn't tell that I had really followed the recipe as it was and used the Truvia instead of regular sugar. That's a plus for me that means I can use it almost anything and these picky Peters wont be able to tell. I love the fact that they are completely healthy and taste delicious. This is the perfect recipe for a cook out or a kids party or even a rainy day in the house! Truvia really makes a difference in my life style now.

Rated 5 out of 5 by from Coconut Key Lime Ice Pops I tried them out this wekend. They were so simple to make that even my 3yr old niece helped her 8 yr old sister and myself make them. They were refreshing, light, tasty and addictive!! Hit the spot after swimming all afternoon. Yummy in our tummy to be sure. Will definitely make them again! We have a winner here folks ;)

Rated 5 out of 5 by from You Fresh Thing You I love discovering lower cal summer treats and these Key Lime Pops hit the spot. I substituted Joe's Key Lime juice as I didn't have access to real Key Limes and the results were a perfect puckery, sweet combo. Great for company too!
