Made with chocolate chips, walnuts and caramels, these scrumptious bars combine a variety of sweets into one tasty treat. These bars, created by Baking Star contest judge April Athena of CookWithApril, have 12% fewer calories* and 50% less sugar* per serving than the regular brown sugar version of this recipe. Makes 20 bars
Preheat oven to 350° F. Place caramels and heavy cream into a medium saucepan on low heat. Stir until melted and set aside.

In a large bowl, combine flour, oats, Truvia® Sweet Complete® Stevia Leaf Brown Sweetener with a hint of Molasses, baking soda and salt, then mix. Add softened butter then use hand mixer to combine further. Place half of the mixture in 9” x 13” pan and press it down. Bake at 350°F for 8 minutes.

Remove from oven and add chocolate chips and walnuts. Next, pour caramel sauce on top, followed by remaining oat mixture and press down.

Bake at 350° F for 12 minutes.

Store leftovers in sealed container in refrigerator.

Yummy!I was recently diagnosed with ‘diabetes’ and had been bummed since I really enjoy sweets. I’ve now made these three times and am very happy to have a treat that’s OK for a diabetic! Plus it’s delicious, especially with coffee. It does take a little practice to get the base & topping to spread correctly (I now use waxed paper as a helper).

Wonderful treat for diabeticsThe recipe is so good sounding, but there are no ingredient list to show how much of each ingredient I need, i.e. flour or amount of chocolate chips.

Absolute BlissYou would never guess that the bars are lower in sugar than the original recipe. They have just the right amount of chewiness and sweetness to be satisfying yet not sickenly sweet. I love these for breakfast on the go.
