Bourbon Bacon Brussels Sprouts

Whether it's the holidays or any old weekday, these reduced-sugar candied sprouts make for a well-seasoned and flavorful vegetable side.
If you're vegetarian, skip the bacon and substitute 2 to 3 tablespoons of your oil of choice—the more oil, the more caramelization on your sprouts. The smoked paprika adds depth to each bite, and if you want even more of a kick, feel free to put in a pinch of ground cayenne or your favorite hot sauce.

Ingredients
2 slices thick-cut bacon, cut into 1” pieces
2 cloves garlic, smashed
1 lb. Brussels sprouts, trimmed and halved
1⁄2 tsp. kosher salt, plus more for serving
1⁄2 tsp. smoked paprika, plus more for serving
1⁄2 tsp. freshly ground black pepper, plus more for serving
1 tbsp. bourbon
Directions

In a large skillet over medium heat, cook bacon until crispy, 5 to 6 minutes. Transfer bacon to a plate using a slotted spoon. Pour off all but 4 tablespoons bacon fat from the skillet.

Return skillet to medium heat. Add garlic and Brussels sprouts cut-side down. Let cook, undisturbed, until bottoms are golden and edges are crispy, 5 to 6 minutes. Add salt, paprika, and pepper, and continue to cook, stirring occasionally, until sprouts are golden all over and tender, 4 to 5 minutes more.

Stir in sweetener and bourbon and cook until thick and syrupy, 2 to 3 minutes. Return bacon to skillet and toss to coat.
