Nanaimo Bars Recipe made with Truvia

Ingredients

Bottom Layer

  • ½ cup unsalted butter

  • 1 Tbsp + 1 tsp of zero-calorie Truvia Original Calorie-Free Sweetener Spoonable Jar****

  • ⅓ cup unsweetened cocoa powder

  • 1 egg, pasteurized***

  • 1 tsp vanilla extract

  • 2 cups graham cracker crumbs

  • 1 cup unsweetened shredded coconut

  • ½ cup chopped walnuts

Filling

  • ½ cup + 1 Tbsp of zero-calorie Truvia Original Calorie-Free Sweetener Spoonable Jar*****

  • 1 tsp corn starch

  • ¼ cup unsalted butter, room temperature

  • ½ cup powdered sugar

  • 2 Tbsp skim milk

  • 2 Tbsp vanilla custard powder or vanilla pudding mix

  • 1 tsp vanilla extract

Topping

  • 4 oz. semisweet chocolate

  • 1 Tbsp unsalted butter

Directions

Bottom Layer
  • 1.

    In a saucepan over low heat, melt the butter.

  • 2.

    Remove from heat and stir in the Truvia Original Sweetener and cocoa powder. Whisk in the beaten egg. Return the saucepan to low heat stirring constantly until the mixture thickens (1 - 2 minutes).

  • 3.

    Remove from heat and stir in the vanilla, graham cracker crumbs, coconut, and walnuts.

  • 4.

    Press the mixture into a greased 9” square pan. Cover and refrigerate until firm (about an hour).

Filling
  • 5.

    In a coffee or spice grinder, mix the Truvia Original Sweetener and corn starch until it resembles powdered sugar.

  • 6.

    In a separate bowl, beat the butter until smooth. Add the rest of the ingredients, including the powdered Truvia Original Sweetener and beat until the mixture is smooth. If the mixture is too thick to spread, add a little more milk.

  • 7.

    Spread the filling over the bottom layer, cover, and refrigerate until firm (about 30 minutes).

Topping
  • 8.

    Chop the chocolate into small pieces. Over low heat, melt the chocolate and butter.

  • 9.

    Spread over the filling and refrigerate for at least 10 minutes to allow the topping to harden.

*This bar has 170 calories and 8 grams of sugar per serving as compared to 220 calories and 21 grams of sugar per serving in the full-sugar version
