Apple Pie Crumb Bar made with Truvia

This recipe is a fun twist on the classic apple pie, with apple pie filling spread on top of a buttery, crumbly shortbread base and sprinkled with a crumb topping. Ingredients

Apple Pie Filling

  • 3 cups chopped granny smith apples

  • 1 Tbsp cornstarch

  • 12 tsp ground cinnamon

  • 116 tsp salt

  • 1 Tbsp fresh lemon juice

  • 12 cup water

  • 2 Tbsp Truvía® Brown Sugar Blend

Dough

  • 4 cups all-purpose flour

  • 34 cup Truvía® Brown Sugar Blend

  • 14 tsp sea salt

  • 1 tsp baking powder

  • 1 cup cold unsalted butter, diced

  • 1 egg, beaten

  • 14 cup heavy cream

Directions

APPLE PIE FILLING
  • 1.

    Combine the apples, cornstarch, cinnamon, salt, lemon juice, water, and Truvía® Brown Sugar Blend in a skillet.

  • 2.

    Cook over medium high heat for 12-15 minutes, stirring frequently, until the apples soften. Set aside to cool.

  • 3.

    Preheat the oven to 350°F.

DOUGH
  • 4.

    Next, prepare the dough. Place the flour, Truvía® Brown Sugar Blend, sea salt and baking powder in a large bowl, and whisk to combine.

  • 5.

    Add the cold butter to the bowl, and use your fingertips to rub the butter into the flour, in order to break the butter down into small pieces that are coated in flour. Add in the egg, and toss around to distribute the moisture.

  • 6.

    Next, add in the heavy cream, and toss the liquid around to moisten the dough further. At this point the dough might look crumbly but if you gather a handful with your fingers and press, it should hold together.

  • 7.

    Split the dough in half, and press one half of the dough down into the bottom of an 8x8 baking pan lined with parchment paper.

  • 8.

    Add all of the apple pie filling on top, and spread it evenly with a spatula or spoon. Crumble the remaining half of the dough on top.

  • 9.

    Bake in the center of the oven for 50 minutes, until lightly golden on top.

  • 10.

    Let the bars cool completely, then remove the bars from the pan and cut into squares.

*These bars have 270 calories and 8 grams of sugar per serving compared to the brown sugar-sweetened version which have 300 calories and 23 grams of sugar.

Rated 4 out of 5 by from Delicious apple bar! I have made this recipe twice for my pre-diabetic husband. I love them. The only issue is there is a lot of crust to it, I think I'll make it in a 9 x 13 pan next time and maybe even make more filling for it.
